I made some excellent sweet potato biscuits last night. My fiance's mom has been making them for ages, and I was told mine were just as good. woohoo!
I had never bought sweet potatoes before, the ones I bought ended up being white on the inside. I had never even heard of white sweet potatoes before. I made them the night before and whipped them up in my mixer with some milk and butter and ate them mashed. Used the leftovers (about 2 cups) in the biscuits.
4 cups of flour
1/2 cup of light brown sugar
5 tsp baking powder
1/2 tsp salt
10 tbsp butter, room temperature
1/3 cup milk
2 sweet potatoes, mashed
heat oven to 425
mix together flour, sugar, baking powder and salt. Add butter and cut in with the flour with one of those wisk masher things, or use 2 butter knives and criss cross them untill all the dough is in fine crumbles. no big chunks. then add the sweet potatoes and milk and stir or use your hands to form into a ball of dough.
flour your counter and spread the dough out into an 8 1/2" square. cut into pieces, about 20. Put on baking sheet and bake 12-15 minutes.
Yum!
I added a little nutmeg into them also. That made them really good.
